Bacon Wrapped Rainbow Trout

Ingredients:

  •  2 8-ounce boneless trout fillets

  • 1 package of sliced bacon

  • Seasoning to taste:

Preparation:

  • Preheat the oven to 400 degrees

  • Season the outside of the trout and bacon slices with salt, black pepper and garlic and RDR.

  • Carefully wrap slices of uncooked bacon around the outside of each trout.

  • In a large cast iron pan or heavy skillet over medium-high heat add the oil.

  • When the oil is hot add the trout, skin side down. Cook for 2 minutes on each side, until bacon is nicely browned.

  • Turn the fillets back over to their original side and put the entire skillet in the oven for 8-10 minutes or until the inside of the trout is moist and fork-tender.

  • Overcooking dries out and toughens the fish. Trout is done when it flakes easily when pulled with a fork.

Suggested Sides & Pairings:

  • cilantro rice

  • hush puppies

  • grilled or oven roasted vegetables such as asparagus, bell  peppers and red onion.

  • Dry white wines, Sauvignon Blanc

  • Pale ale craft brew
