Bacon Wrapped Rainbow Trout
Ingredients:
2 8-ounce boneless trout fillets
1 package of sliced bacon
Seasoning to taste:
seasoned salt
course black pepper
minced garlic
Olive oil
Preparation:
Preheat the oven to 400 degrees
Season the outside of the trout and bacon slices with salt, black pepper and garlic and RDR.
Carefully wrap slices of uncooked bacon around the outside of each trout.
In a large cast iron pan or heavy skillet over medium-high heat add the oil.
When the oil is hot add the trout, skin side down. Cook for 2 minutes on each side, until bacon is nicely browned.
Turn the fillets back over to their original side and put the entire skillet in the oven for 8-10 minutes or until the inside of the trout is moist and fork-tender.
Overcooking dries out and toughens the fish. Trout is done when it flakes easily when pulled with a fork.
